Ingredients
  

Rice and Vegetables

  • 2 cups cooked white rice preferably day-old
  • 1 cup mixed vegetables peas and carrots recommended
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Eggs and Oils

  • 4 large eggs
  • 2 tablespoons vegetable oil divided
  • 1 teaspoon sesame oil
  • 2 teaspoons minced garlic

Garnishes

  • 2 pieces green onions finely chopped
  • 2 tablespoons soy sauce

Instructions
 

Preparation

  • If using freshly cooked rice, spread it out on a baking sheet and let it cool for about 30 minutes.
  • Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Scramble the eggs until fully cooked and set aside.
  • In the same skillet, add another tablespoon of vegetable oil along with minced garlic and mixed vegetables. Cook for 3-4 minutes until tender.
  • Add the cooled rice to the skillet, breaking up any clumps. Stir in soy sauce and sesame oil, cooking for another 3-5 minutes until heated through.
  • Mix in the scrambled eggs and chopped green onions. Adjust seasoning with salt and pepper as desired.

Notes

For best results, use day-old rice that has been refrigerated.
