Ingredients
  

Noodles and Protein

  • 1 pound fresh or frozen udon noodles
  • 1 pound boneless, skinless chicken thighs cut into bite-sized pieces
  • 1 tablespoon vegetable oil

Vegetables

  • 1 medium yellow onion thinly sliced
  • 2 cloves garlic minced
  • 1 cup sliced mushrooms shiitake, cremini, or button
  • 1 red bell pepper thinly sliced
  • 1 green bell pepper thinly sliced
  • ½ cup sliced green onions plus more for garnish

Sauce

  • ¼ cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • ½ teaspoon ground ginger
  • ¼ teaspoon red pepper flakes optional

Garnishes

  • sesame seeds for garnish
  • bonito flakes for garnish, optional

Instructions
 

Preparing the Noodles

  • Thaw frozen udon noodles completely, either overnight in the refrigerator or by running under cold water.
  • If using fresh udon, gently separate the noodles with fingers to avoid clumping.

Preparing the Sauce

  • In a small bowl, whisk together soy sauce, oyster sauce, Worcestershire sauce, brown sugar, sesame oil, ground ginger, and red pepper flakes. Set aside.

Cooking the Chicken and Vegetables

  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Add chicken and cook until browned, about 5-7 minutes. Remove chicken and set aside.
  • Add onion and cook until softened, about 3-5 minutes. Add garlic and cook for another minute.
  • Add the bell peppers and mushrooms to the skillet and cook until slightly softened, about 5-7 minutes.
  • Return the cooked chicken to the skillet with the vegetables.

Bringing it All Together

  • Add udon noodles to the skillet with chicken and vegetables.
  • Pour the prepared sauce over everything.
  • Toss well to ensure noodles are coated in the sauce. Cook for 2-3 minutes until heated through.
  • Stir in sliced green onions.

Serving and Garnishing

  • Serve the Yaki Udon hot.
  • Garnish with sesame seeds, extra green onions, and bonito flakes if desired.

Notes

Feel free to mix up protein and vegetables according to your preferences. Adjust seasoning and spice levels to taste.
