For the Salad
- 1 package fresh cheese tortellini use gluten-free if needed
- 1 cup chopped salami or prosciutto substitute with bacon or omit for vegetarian option
- 4 cups baby spinach kale makes a great substitute
- ½ cup oil-packed sun-dried tomatoes fresh tomatoes can be used in summer
- ½ cup freshly grated Parmesan can swap with Pecorino or mozzarella
For the Vinaigrette
- ¼ cup extra-virgin olive oil use high-quality for best taste
- 2 tablespoons balsamic vinegar can swap with red wine vinegar
- 1 tablespoon honey omit for lower-sugar version
- 1 teaspoon kosher salt adjust according to palate
- ½ teaspoon freshly ground black pepper use freshly ground for best results
Preparation
Bring a pot of salted water to a boil, then add the fresh cheese tortellini. Cook according to package instructions until al dente, about 3-5 minutes.
In a mason jar, combine the extra-virgin olive oil, balsamic vinegar, honey, kosher salt, and freshly ground black pepper. Seal and shake until well mixed.
In a large mixing bowl, combine the cooled tortellini, chopped salami or prosciutto, fresh baby spinach, oil-packed sun-dried tomatoes, and freshly grated Parmesan. Drizzle the vinaigrette over and toss gently.
Let the salad sit for at least 10 minutes, then serve or refrigerate for later.
