  • 1 tablespoon butter
  • 1 tablespoon olive oil or oil from sun-dried tomatoes
  • 4 pieces salmon fillet
  • to taste salt
  • to taste pepper
  • 2 cloves garlic minced
  • 3-4 sun-dried tomatoes packed in oil, sliced
  • 125 ml dry white wine
  • 250 ml double/heavy cream
  • 50 g Parmesan cheese grated
  • 30 g fresh spinach

Cooking Steps

  • Pat the salmon dry with a paper towel. Season with salt and pepper. Heat olive oil and butter in a frying pan, sear the salmon for 6-7 minutes until golden, skin side up. Remove from pan.
  • Add garlic and sun-dried tomatoes to the pan, sauté for 30 seconds. Deglaze with white wine and simmer for 5 minutes until reduced by half.
  • Stir in heavy cream and grated Parmesan until smooth. Add spinach and return salmon to the pan. Simmer for 5 minutes and season the sauce to taste.

Notes

Patting the salmon dry is crucial for a good sear. Use high heat for the best flavor. You can replace wine with stock for a non-alcoholic option.
