Ingredients
  

  • 4 fillets fish (tilapia, snapper, or preferred)
  • 1 cup shredded coconut sweetened or unsweetened
  • 1 cup panko breadcrumbs
  • ½ cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons coconut milk
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Preparation Steps

  • Rinse fish fillets under cold water and pat dry with paper towels. Squeeze lime juice over the fillets and let marinate.
  • Set up three shallow bowls: one with flour, one with whisked eggs and coconut milk, and one with coconut, breadcrumbs, garlic powder, and paprika.
  • Dredge fish in flour, then dip in egg mixture, and finally press into coconut-breadcrumb mixture. Repeat for each fillet.

Notes

For a lighter option, bake the fish fillets at 400°F for about 15-20 minutes, flipping halfway through. This dish pairs wonderfully with mango salsa or a light green salad.
