Ingredients
  

  • 2 lb salmon filet
  • 1 tablespoon avocado oil for drizzling
  • 1 teaspoon sea salt
  • 1 teaspoon garlic powder
  • ½ red onion chopped
  • 1 8.5-oz jar sun-dried tomatoes drained
  • 5 oz baby spinach
  • 6 oz feta cheese crumbles
  • cup pesto sauce optional

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit.
  • Lay the salmon filet on a parchment-lined large baking sheet or lightly sprayed baking dish. Drizzle with avocado oil and brush it over the salmon surface. Sprinkle with sea salt and garlic powder. Bake for 10 minutes.
  • While the salmon is baking, heat avocado oil in a skillet over medium heat. Add chopped onion and sauté until softened, about 5 to 8 minutes.
  • Add sun-dried tomatoes and spinach, cover the skillet, and cook until spinach has wilted, stirring occasionally.
  • Stir in feta cheese and heat until it begins to melt.
  • Remove salmon from the oven, transfer the spinach mixture on top, covering the full filet.
  • Bake for another 8 to 10 minutes until the salmon is cooked through.

Notes

Serve warm with a side of your choice. Pesto sauce is optional but adds additional flavor.
