- 1 pound frozen chopped spinach or 2 pounds fresh
- 2 tablespoons butter
- 0.5 medium onion, chopped
- 2 cloves garlic, minced
- 0.75 cup heavy cream
- 4 ounces cream cheese, softened (½ block Philly)
- 1 cup freshly grated parmesan cheese
- 1 pinch nutmeg
- Salt & pepper to taste
Thaw the frozen spinach and squeeze out excess water, or boil fresh spinach for 1 minute, drain, rinse, and squeeze out water.
In a pot, sauté the butter and onion over medium heat until lightly browned (about 5-7 minutes).
Reduce the heat and stir in garlic, then add heavy cream, cream cheese, parmesan, and nutmeg, stirring until the cream cheese melts.
Stir in the spinach and heat through, adding more cream if needed, or cooking longer to reduce excess liquid.
Season with salt and pepper to taste.
