Cooking Instructions
Preheat the oven to 400°F. Pierce each sweet potato with a fork and bake on a baking sheet for 45-60 minutes until tender.
In a skillet over medium heat, cook the ground beef with salt, black pepper, chili powder, and cumin until browned.
Mix in black beans, corn, and diced tomatoes; cook for an additional 3-5 minutes.
For the avocado crema, blend avocados, lime juice, and sour cream until smooth.
Once the sweet potatoes are done baking, slice them open and fluff the insides. Fill each potato with the beef mixture and top with shredded cheese.
Serve warm with a drizzle of avocado crema.
