Ingredients
  

Vegetables

  • 4 medium sweet potatoes

Meat

  • 1 pound ground beef

Spices

  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon chili powder
  • 1 teaspoon cumin

Canned Goods

  • 1 cup canned black beans rinsed and drained
  • 1 cup corn frozen or canned
  • 1 cup diced tomatoes with juices

Dairy

  • 1 cup shredded cheddar cheese
  • ½ cup sour cream

Fruits

  • 2 avocados
  • 1 tablespoon lime juice

Herbs

  • 2 tablespoons fresh cilantro chopped (optional)

Instructions
 

Cooking Instructions

  • Preheat the oven to 400°F. Pierce each sweet potato with a fork and bake on a baking sheet for 45-60 minutes until tender.
  • In a skillet over medium heat, cook the ground beef with salt, black pepper, chili powder, and cumin until browned.
  • Mix in black beans, corn, and diced tomatoes; cook for an additional 3-5 minutes.
  • For the avocado crema, blend avocados, lime juice, and sour cream until smooth.
  • Once the sweet potatoes are done baking, slice them open and fluff the insides. Fill each potato with the beef mixture and top with shredded cheese.
  • Serve warm with a drizzle of avocado crema.
