Ingredients
  

For the Squash

  • 2 medium acorn squashes halved and seeds removed
  • 1 tablespoon olive oil for brushing (extra virgin preferred)
  • 1 pinch salt to season
  • 1 pinch pepper to season

For the Stuffing

  • 1 cup cooked quinoa fluffy and cooled
  • 0.5 pound ground turkey cooked and crumbled
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 small apple diced (Honeycrisp preferred)
  • 0.5 cup dried cranberries
  • 0.25 cup chopped pecans toasted if possible
  • 1 teaspoon dried sage
  • 0.5 teaspoon ground cinnamon
  • 1 to taste salt
  • 1 to taste pepper
  • 0.25 cup vegetable broth to keep it moist

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Halve the acorn squashes and scoop out the seeds.
  • Brush the inside of the squashes with olive oil and season with salt and pepper.
  • Place squashes cut-side down in a baking dish and bake for 30 minutes.
  • While the squashes bake, prepare the stuffing: In a mixing bowl, combine quinoa, turkey, onion, garlic, apple, cranberries, pecans, sage, cinnamon, salt, and pepper.
  • Mix well and add the vegetable broth for moisture.
  • After 30 minutes, remove squashes from the oven and flip them cut-side up.
  • Fill the squashes with the stuffing.
  • Return to the oven and bake for an additional 15 minutes.
  • Serve warm and enjoy your delicious Stuffed Baked Acorn Squash!
