Instructions
 

Cooking Steps

  • Prepare the chicken by rubbing with salt and black pepper. Let it rest for about 10 minutes.
  • Sear the chicken in heated olive oil for 4-5 minutes per side until golden. Remove from skillet.
  • Sauté the finely diced yellow onion in the same skillet for about 5 minutes until translucent.
  • Stir in minced garlic and ground cumin; sauté for 1 minute.
  • Add ají amarillo paste to the skillet and cook for 2 minutes.
  • Pour in the chicken broth and bring to a gentle simmer.
  • Stir in heavy cream and cook until smooth and slightly thickened.
  • Return the seared chicken to the skillet and simmer for 5 minutes.
  • Top with chopped cilantro and serve with rice, quinoa, or fried plantains.
