Ingredients
  

  • 1 tablespoon bacon drippings
  • 2 cups cornmeal or 1 ½ cups cornmeal and ½ cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon sugar optional
  • 1 large egg optional
  • 1 ¼ cups buttermilk
  • 6 tablespoons unsalted butter melted

Instructions
 

  • Preheat oven to 400°F with bacon drippings in a skillet.
  • Whisk together cornmeal, baking soda, salt, sugar. In another bowl, beat egg and buttermilk, then mix into dry ingredients. Stir in melted butter.
  • Pour batter into hot skillet. Bake for about 20 minutes until edges brown and toothpick comes out clean.
  • Let the cornbread rest in the skillet for 10 to 30 minutes before cutting and serving.

Notes

For a lighter texture, consider mixing half cornmeal and half all-purpose flour.
