Ingredients
  

  • 2 lbs large shrimp, 21-24 count peeled and deveined
  • 1 tablespoon Old Bay Seasoning
  • 1 tablespoon salt for the cooking water
  • cup mayonnaise
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • 1 tablespoon butter plus more to grease the pan
  • ½ cup panko bread crumbs
  • 4 oz shredded mozzarella
  • 4 oz shredded medium cheddar cheese

Instructions
 

  • Preheat the oven to 375 ̊F. Grease a 2 ½ quart casserole dish or skillet with butter.
  • Bring a large pot of water to a boil and add 1 tablespoon salt and 1 tablespoon Old Bay Seasoning. Add the shrimp and cook for 30 seconds until opaque. Remove with a strainer and let cool.
  • Add mayo, garlic powder, and black pepper to shrimp. Stir to coat. Sprinkle on cheese and stir again. Transfer the mixture to the prepared casserole dish.
  • Melt 1 tablespoon butter and stir in ½ cup bread crumbs until moistened. Sprinkle over the shrimp.
  • Bake uncovered at 375 ̊F for 13-15 minutes until center reaches 145 ̊F. Broil for 1-2 minutes to brown crumbs. Rest for 15 minutes before serving.

Notes

Some shrimp may release liquid if overcooked or not thawed properly. Cover and refrigerate leftovers for 2-3 days. Can be made ahead and baked later.
