Salad

  • 4 cups finely shredded red/purple cabbage
  • 1 medium carrot julienned
  • 1 handful mint leaves roughly chopped

Dressing

  • 2 tablespoon lemon juice
  • 3 tablespoon olive oil
  • ½ teaspoon salt
  • black pepper

Preparation

  • Combine Salad ingredients in a bowl.
  • Add Dressing ingredients, then toss to combine.

Notes

The mint can be substituted with any other herb you prefer or that you think will suit the dishes that you are making. When making Asian dishes, lemon can be substituted with lime and olive oil with a neutral flavored oil such as grapeseed or canola oil.
