Ingredients

mild tasting fish (e.g., Pollock or cod)

vegetable oil for deep frying
Amount will vary depending on your fryer.
Batter

all purpose flour
1
cup
beer
I recommend dark beer such as Guinness.
garlic powder
to taste.
black pepper
to taste.
Toppings

Rubio's™ White Sauce

finely shredded cabbage

tomatoes, diced

onion, diced

chopped cilantro

limes, cut into wedges
Instructions
Batter Preparation
Combine the flour, garlic powder and black pepper. Mix with the beer and let it sit for at least an hour.
Fish Preparation
Wash the fish in water with a bit of salt or some lime juice then dry it completely.
Frying
Heat the vegetable oil to 375 degrees. Check the oil temperature using a cube of bread.
Vigorously whisk the batter before dipping the fish to make it lighter and crispier.
Dip the fish into the batter and immediately into the hot oil. Cook until golden brown, turning as necessary.
Tortilla Preparation
While frying the fish, warm the tortillas on a dry hot skillet until hot. Place them in a tortilla warmer and keep covered.
Pico de Gallo Preparation
Combine the tomato, onion and cilantro in a separate bowl to make Pico de Gallo. Set aside in the refrigerator.
Assembly
Place a warm tortilla on your plate and add a piece of the fish at the center.
Spoon a small amount of the white sauce over the fish. Optionally add finely shredded cheese.
Spoon some Pico de Gallo over the fish, add a handful of cabbage, and squeeze lime over.
If desired, add Rubio's Hot Sauce for spice. Fold up the tortilla and enjoy!
Notes
