Ingredients
  

For the Pumpkin Spiced Cookies

  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1.5 teaspoons ground ginger
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 1 cup pumpkin puree
  • 0.75 cup brown sugar
  • 0.25 cup granulated sugar
  • 0.5 cup vegetable oil
  • 0.25 cup maple syrup
  • 1 teaspoon vanilla extract

For the Cinnamon Sugar Coating

  • 0.25 cup granulated sugar
  • 1 teaspoon ground cinnamon

For the Frosting

  • 0.5 cup vegan butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons plant-based milk as needed for consistency

For the Icing

  • 1 cup powdered sugar
  • 1-2 tablespoons plant-based milk
  • Food coloring (orange, black, and white)

Instructions
 

Making the Cookies

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves. Set aside.
  • In a large bowl, combine the pumpkin puree, brown sugar, granulated sugar, vegetable oil, maple syrup, and vanilla extract. Stir until smooth and well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • In a small bowl, mix together the granulated sugar and cinnamon for the coating. Roll the cookie dough into 1-inch balls, gently flatten and cut out desired shapes.
  • Place the shapes onto the prepared baking sheets, leaving about 2 inches of space. Bake for 10-12 minutes. Let cool on wire racks.

Preparing the Frosting

  • In a large bowl, beat the vegan butter until creamy. Gradually add the powdered sugar and mix on low speed until combined. Add vanilla extract and plant-based milk to achieve a smooth consistency.
  • Once the cookies are completely cool, spread frosting on one cookie's flat side and top with another cookie.

Notes

To create a pumpkin shape, flatten the dough ball and place additional strips of dough on top for ridges.
