Ingredients
  

Apples

  • 6 medium Fuji apples
  • 1 tablespoon fresh lemon juice

Pumpkin Pie Filling

  • 1 cup pure pumpkin purée
  • ½ cup heavy cream
  • ¼ cup brown sugar
  • 2 tablespoon pure maple syrup
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon pure vanilla extract
  • 1 large egg

Homemade Whipped Cream

  • 1 cup heavy cream very cold
  • 2 tablespoon powdered sugar
  • ½ teaspoon pure vanilla extract

Instructions
 

Preparation

  • Wash and dry the Fuji apples.
  • Slice off the top quarter of each apple, then scoop out the core and some of the flesh, leaving about a ⅓-inch border.
  • Arrange them in a baking dish and brush the insides with lemon juice to prevent browning.

Filling

  • In a bowl, whisk together pumpkin purée, heavy cream, brown sugar, maple syrup, pumpkin pie spice, vanilla extract, and egg until smooth.
  • Ensure the mixture is lump-free for even baking.

Baking

  • Spoon the pumpkin pie filling into the hollowed apples, filling each to just below the rim.
  • Bake at 350°F (175°C) for 35-40 minutes, until the custard is set and the apples are fork-tender.

Whipped Cream

  • While the apples bake, whip heavy cream in a chilled bowl with an electric mixer until soft peaks form.
  • Add powdered sugar and vanilla extract, then continue whipping to stiff peaks.
  • Keep refrigerated until ready to use.

Assembly

  • Let the baked apples cool for at least 10 minutes.
  • Top each with a dollop of whipped cream, sprinkle with crushed graham crackers, and drizzle with caramel sauce before serving.

Notes

Prepare the pumpkin pie filling a day ahead for deeper flavor. To ensure even baking, slice the bottoms of apples if they aren't sitting level.
