- 0.5 cup packed light brown sugar
- 0.5 cup oil
- 1 can (15-ounce) pumpkin puree about 1 ¾ cups
- 2 large eggs
- 2 teaspoons vanilla extract
Preheat your oven to 350°F and set the rack in the lower-middle position. Lightly grease a 9×5-inch loaf pan, then line the bottom with a piece of parchment paper.
