Ingredients
  

Main Ingredients

  • 3 pounds boneless skinless chicken thighs
  • 2 teaspoon olive oil
  • 4-5 tablespoon water for pan frying cooking method, optional

Marinade Ingredients

  • 1 can chipotle peppers in adobo sauce (7 oz can)
  • 4 tablespoon fresh lime juice
  • 4 tablespoon fresh orange juice
  • ½ cup fresh cilantro
  • 6 cloves garlic
  • 1 medium onion quartered
  • 1 teaspoon cumin
  • 1 tablespoon dried Oregano
  • 1 teaspoon ground Coriander optional
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions
 

Marinade

  • Add all of the marinade ingredients to a blender, food processor, or a large bowl and blend until evenly combined and smooth.
  • In a large airtight container or Ziploc bag, add the chicken thighs and the marinade. Mix until the chicken is evenly coated in the marinade.
  • Transfer to the fridge and let marinate for up to 24 hours, ideally overnight for best flavor, but a minimum of 15-30 minutes is acceptable.

Grilled Chicken

  • Preheat grill to high, about 350°F-400°F. Coat the grill with olive oil.
  • Grill the chicken for 15-30 minutes, flipping until the chicken reaches an internal temperature of 165°F.

Pan Seared Chicken

  • Heat a skillet or grill pan on medium-high heat with olive oil.
  • Add the chicken along with all of the sauce/marinade. Cook for 5 minutes, then flip and cook for an additional 3-5 minutes until it reaches an internal temperature of 165°F.
  • Drizzle the leftover sauce from the pan over the cooked chicken to enhance flavor and keep it juicy. If sauce starts to dry out, add a splash of water.

Air Fryer Chicken

  • Coat the air fryer basket with olive oil.
  • Add the chicken to the air fryer basket.
  • Air fry the chicken at 400°F for 8 minutes. Open the air fryer, flip the chicken, and cook for an additional 6-7 minutes or until it reaches an internal temperature of 165°F.

Notes

For best results, marinate the chicken overnight and use fresh ingredients.
