Equipment

  • large skillet

Ingredients

  • 2 tablespoons butter
  • ¼ cup all purpose flour (or use whole wheat or all purpose gluten free flour)
  • 3-4 cups turkey drippings/stock (plus additional chicken broth if necessary)
  • salt and pepper to taste
  • extra herbs (rosemary + thyme, if desired)

Instructions

  • Make sure you have enough turkey drippings + stock to equal about 4 cups. If you don’t have enough turkey drippings, add chicken broth to total 4 cups.
  • Add butter to a large skillet over medium high heat. Once melted, whisk in a bit of flour, then slowly add in the drippings/stock alternately with the flour, whisking to avoid lumps.
  • Bring the gravy to a simmer and allow it to thicken for a minute or two, stirring occasionally. Add more stock if necessary to thin. Taste and adjust salt and pepper as needed, and add herbs if desired.

Notes

This gravy serves 4-6. Double the recipe if more servings are needed.
