Method
Prepare the Peach Topping: In a saucepan, melt butter over medium heat, then add sliced peaches, brown sugar, cinnamon, and lemon juice. Cook until the peaches are tender and syrupy, about 5-7 minutes.
Make the Pancake Batter: In one bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix milk, egg, and melted butter. Combine both mixtures gently until just mixed—don’t over-mix.
Cook the Pancakes: Preheat a skillet over medium heat. Pour ¼ cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes per side.
