  • 2 tablespoons Melted Butter (or Coconut Oil). Use coconut oil for a dairy-free option.

For the Peach Topping

  • 2 cups Fresh Peaches (or Canned Peaches). Frozen peaches can also be used if thawed and drained.
  • ¼ cup Brown Sugar White sugar works as an alternative.
  • 1 teaspoon Cinnamon Adds depth of flavor.
  • 1 tablespoon Lemon Juice Brightens the topping.
  • 1 tablespoon Butter (for topping). Can replace with plant-based butter for vegan versions.

Method

  • Prepare the Peach Topping: In a saucepan, melt butter over medium heat, then add sliced peaches, brown sugar, cinnamon, and lemon juice. Cook until the peaches are tender and syrupy, about 5-7 minutes.
  • Make the Pancake Batter: In one bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix milk, egg, and melted butter. Combine both mixtures gently until just mixed—don’t over-mix.
  • Cook the Pancakes: Preheat a skillet over medium heat. Pour ¼ cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes per side.
  • Assemble and Serve: Stack the pancakes on a plate, top with the warm peach mixture, and add a dollop of whipped cream or a scoop of vanilla ice cream if desired.
