Ingredients
  

  • 2 medium zucchini halved lengthwise and sliced into ½-inch slices
  • 2 medium yellow squash halved lengthwise and sliced into ½-inch slices
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

Instructions
 

  • Preheat oven to 450 degrees F. Line a sheet pan with parchment paper or a silicone baking mat.
  • Toss the sliced zucchini and squash together with the olive oil, salt, and pepper in a large bowl. Spread slices in a single layer on the prepared sheet pan.
  • Bake for 10-15 minutes, until the veggies are tender and lightly browned around the edges.

Notes

This recipe works well with really any spices/herbs/seasonings added in with the salt & pepper - as long as they don't add too much liquid. You can add ingredients like grated parmesan, garlic, and Italian seasoning before baking, or top with goat cheese and lemon zest after roasting.
