Ingredients
  

Pasta and Vegetables

  • 12 ounces short pasta, like penne or fusilli
  • 1 medium eggplant, diced into half-inch cubes
  • 1 large zucchini, sliced into half-moons
  • 1 large yellow bell pepper, chopped
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 3 cups vegetable broth
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon dried Herbes de Provence
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • Fresh basil leaves for garnish
  • Grated Parmesan cheese optional

Preparation

  • Prepare all your vegetables before cooking. Dice the eggplant, slice the zucchini, and chop the bell pepper into uniform pieces.

Sear the Base

  • Heat olive oil in a large pot over medium-high heat. Add diced onion and bell pepper; sauté for about five minutes.
  • Stir in minced garlic and Herbes de Provence for one minute.

Brown the Cubes

  • Add eggplant and zucchini to the pot. Cook for about five to seven minutes until slightly golden, stirring occasionally.

Pour the Liquid

  • Stir in crushed tomatoes, vegetable broth, salt, and black pepper. Bring to a gentle boil.

Submerge the Pasta

  • Add dry pasta to the pot, ensuring it is submerged in the liquid. Cover and reduce heat to medium-low.

Simmer the Pot

  • Let the pasta simmer for about ten to twelve minutes or according to packet instructions for al dente.

Fold the Herbs

  • Turn off heat and stir in half of the basil leaves. Taste and adjust seasoning if needed.

Rest the Sauce

  • Let the pot sit for five minutes before serving. Garnish with remaining basil and Parmesan if desired.
