Ingredients
  

Chicken and Vegetables

  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoons Cajun seasoning
  • 1 large onion, chopped
  • 2 large bell peppers (green and red), chopped

Rice and Liquids

  • 1 cup long-grain white rice
  • 4 cups chicken broth
  • 1 cup diced tomatoes
  • 1 cup frozen peas

Instructions
 

Cooking Instructions

  • Season chicken with salt, pepper, and Cajun seasoning.
  • In a large pot or Dutch oven, heat olive oil over medium-high heat. Sear the seasoned chicken until browned (about 5-7 minutes). Remove from pot.
  • Sauté onion and bell peppers in the same pot until softened (about 5 minutes). Stir in minced garlic.
  • Add rice, stirring to coat; then pour in chicken broth and diced tomatoes. Bring to a boil.
  • Return chicken to the pot, reduce heat to low, cover, and simmer for 20-25 minutes until rice is tender.
  • Stir in frozen peas and cook an additional 5 minutes. Fluff rice with a fork before serving.
