Ingredients
  

  • 1 pound cooked salmon, flaked
  • ½ cup breadcrumbs
  • ¼ cup red onion, finely diced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 egg
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons olive oil (for frying)

Instructions
 

  • In a large bowl, combine flaked salmon, breadcrumbs, red onion, parsley, and dill.
  • Add egg, mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and black pepper.
  • Mix gently until well combined but do not overmix.
  • Form the mixture into small patties about 2–3 inches wide.
  • Heat olive oil in a skillet over medium heat.
  • Cook patties for 3–4 minutes on each side until golden brown and crispy.
  • Remove from skillet and place on paper towels to drain excess oil.
  • Serve warm with lemon wedges or your favorite dipping sauce.

Notes

Chill patties for 10 minutes before cooking to help them hold their shape. Use fresh herbs for the best Mediterranean flavor. You can substitute Greek yogurt for mayonnaise for a lighter option. Serve with salad, rice, or pita for a complete meal.
