Ingredients
  

For the Potatoes

  • 2 pounds Yukon Gold or Russet potatoes cut into bite-sized chunks
  • 1 teaspoon Kosher Salt for boiling water

For the Dressing

  • ¼ cup Sour Cream
  • cup Mayonnaise
  • 2 teaspoons Dijon Mustard
  • 2 teaspoons White Vinegar
  • 3 teaspoons Dry Ranch Dressing Mix
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Onion Powder
  • ½ teaspoon Black Pepper fresh cracked is best
  • ¼ teaspoon Salt

Mix-ins

  • 6 slices Bacon cooked crispy and crumbled
  • 1 cup Cheddar Cheese shredded
  • ½ cup Green Onions thinly sliced

Instructions
 

Preparation

  • Peel and cut the potatoes into ½-inch chunks. Add the potatoes to a large pot with kosher salt and cover with water by about 1 inch. Bring to a boil.
  • Once boiling, reduce heat and let the potatoes simmer for 8–10 minutes, or until fork tender.
  • Drain the potatoes and spread them out to cool for 10–15 minutes.
  • In a large mixing bowl, combine sour cream, mayonnaise, Dijon mustard, white vinegar, garlic powder, onion powder, salt, and pepper until smooth.
  • Add the cooled potatoes to the dressing and gently toss to coat. Fold in the bacon, cheddar cheese, and green onions.
  • Cover and refrigerate for 30 minutes to 1 hour to let the flavors meld. Garnish with extra bacon, cheddar, and green onions before serving.

Notes

Don’t skip the cooling step! Warm potatoes can soak up too much dressing and turn mushy. Make your bacon extra crispy so it stays crunchy in the salad. You can prep this a day in advance, just wait to garnish until serving time.
