Ingredients
  

Crust

  • 2 cups raspberries fresh or frozen
  • 2 ¼ cups all-purpose flour
  • ½ cup granulated sugar for crust
  • 1 cup unsalted butter melted

Filling

  • 1 ½ cups granulated sugar for filling
  • 6 large eggs
  • ¾ cup lemon juice freshly squeezed

Instructions
 

Preparation

  • Prepare raspberry puree by blending raspberries until smooth, then strain to remove seeds.
  • For the shortbread base, whisk together flour, sugar, and salt. Stir in melted butter until combined. Press into a lined 9×13 inch baking pan and bake at 325°F for 20-25 minutes.
  • In a bowl, mix sugar and cornstarch, then add eggs one at a time. Stir in cooled raspberry puree and lemon juice until well combined.
  • Pour filling over baked crust and return to oven for an additional 20-25 minutes or until set.
  • Cool completely before slicing into bars.
