Crust
- 2 cups raspberries fresh or frozen
- 2 ¼ cups all-purpose flour
- ½ cup granulated sugar for crust
- 1 cup unsalted butter melted
Filling
- 1 ½ cups granulated sugar for filling
- 6 large eggs
- ¾ cup lemon juice freshly squeezed
Preparation
Prepare raspberry puree by blending raspberries until smooth, then strain to remove seeds.
For the shortbread base, whisk together flour, sugar, and salt. Stir in melted butter until combined. Press into a lined 9×13 inch baking pan and bake at 325°F for 20-25 minutes.
In a bowl, mix sugar and cornstarch, then add eggs one at a time. Stir in cooled raspberry puree and lemon juice until well combined.
Pour filling over baked crust and return to oven for an additional 20-25 minutes or until set.
Cool completely before slicing into bars.
