Ingredients
  

For the cake

  • 0.5 cup vegetable oil plus more for the pan
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 lemons lemon zest plus 2 Tbsp. lemon juice
  • 1 cup Greek yogurt
  • 2 tsp. lemon extract
  • 0.25 tsp. yellow gel food coloring
  • 2 cups all-purpose flour
  • 2 tsp. baking powder
  • 0.5 tsp. baking soda
  • 0.5 tsp. kosher salt

Soak

  • 0.33 cup lemon juice
  • 2 Tbsp. sifted powdered sugar

Glaze

  • 2.25 cups sifted powdered sugar
  • 3 Tbsp. lemon juice
  • 1 Tbsp. salted butter melted

Instructions
 

Preparation

  • Preheat the oven to 350°F. Grease a 9-by-5-inch loaf pan and set aside.
  • In a large bowl, add the granulated sugar, eggs, and lemon zest. Whip until light and fluffy, about 2 to 3 minutes. Add the oil, Greek yogurt, lemon extract, food coloring, and lemon juice, and mix until smooth.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Fold into the wet ingredients until just combined. Transfer to the prepared loaf pan, smoothing the top.
  • Bake until golden and a toothpick comes out clean, about 50 to 55 minutes.
  • In a small bowl, mix lemon juice and powdered sugar for the soak. Pour over the hot cake and let cool completely in the pan for about 1 hour.
  • In a medium bowl, combine the powdered sugar, lemon juice, butter, and 1 tablespoon water. Mix until smooth.
  • Once cooled, remove the cake from the pan and place on a cooling rack. Pour the glaze over the cake and let sit for 30 minutes to set before slicing and serving.
