Step-by-Step Instructions

  • In a large mixing bowl, combine cottage cheese, blueberries, lemon zest, honey, almond flour, vanilla extract, and a pinch of salt. Gently fold together for 2-3 minutes.
  • Cover the bowl tightly with plastic wrap or a lid and refrigerate for 15-20 minutes to allow the mixture to firm up.
  • Remove the mixture from the refrigerator and roll into 1-inch balls, placing them on a parchment-lined baking sheet.
  • For warm bites, preheat the oven to 325°F (160°C) and bake for 8-10 minutes until lightly firm but not browned.
  • Let the bites cool on the baking sheet for 5 minutes. Optionally drizzle with honey and garnish with blueberries or lemon zest before serving.
