Method

  • Preheat your oven to 350°F (175°C). Line a jelly roll pan with parchment paper and lightly grease it.
  • In a mixing bowl, whisk together the cake flour, cocoa powder, baking powder, and a pinch of salt.
  • In another bowl, beat the eggs and granulated sugar until pale and fluffy. Add melted butter and vanilla extract, mixing well.
  • Gently fold the dry ingredients into the wet mixture until combined, being careful not to overmix.
  • Pour the batter into the prepared jelly roll pan and spread it evenly. Bake for 15-20 minutes.
  • Remove the pan from the oven and cool the cake in the pan for about 5 minutes. Then turn it out onto a powdered sugar-dusted towel.
  • Beat together the softened cream cheese and powdered sugar until smooth and creamy.
  • Spread the cream cheese filling evenly over the cooled cake, leaving a small margin.
  • Carefully roll the cake from one short side using the towel to help guide it. Set seam-side down.
  • Refrigerate for at least 30 minutes before slicing to serve.
