  • 2.5 teaspoon baking powder
  • 1 teaspoon baking soda

Wet Ingredients

  • 1 cup unsalted butter, softened
  • 1.75 cups granulated sugar
  • 3 large eggs
  • 1.5 cups ripe bananas, mashed
  • 1 cup buttermilk
  • 2 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 0.25–0.5 cup powdered sugar
  • 2 cups heavy whipping cream

  • 1 cup walnuts, toasted & chopped

Baking Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • Toast walnuts in a skillet over medium heat until fragrant (about 3–4 minutes). Let cool.
  • In a bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
  • In another bowl, beat softened butter and sugar until fluffy. Add eggs one at a time and stir in vanilla extract.
  • Fold in mashed bananas and buttermilk until just combined.
  • Gradually add dry ingredients to wet mixture, folding in toasted walnuts last.
  • Pour batter into prepared pans and bake for 30–35 minutes until a toothpick comes out clean. Cool completely on wire racks.
  • Assemble by layering whipped cream and banana slices between cake layers; frost the top and sides with remaining whipped cream.
  • Chill for at least one hour before serving.

Notes

Make sure to use ripe bananas for the best flavor and sweetness in the cake.
