Chicken and Base Ingredients

  • 2 cups cooked rice or quinoa
  • 2 breasts boneless, skinless chicken diced
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • salt to taste
  • black pepper to taste

Toppings

  • cup dried cranberries
  • ½ cup cucumber diced
  • ½ cup cherry tomatoes halved
  • ¼ cup red onion sliced
  • ¼ cup crumbled feta cheese
  • 2 tablespoons fresh parsley chopped

Cooking Instructions

  • Heat 1 tablespoon olive oil in a skillet over medium heat.
  • Add diced chicken and cook until golden brown and fully cooked, about 6–8 minutes.
  • Stir in garlic, honey, lemon juice, oregano, paprika, salt, and black pepper.
  • Cook for 2–3 minutes until the sauce thickens and coats the chicken evenly.
  • Remove from heat and set aside.
  • In serving bowls, add a base of cooked rice or quinoa.
  • Top with honey garlic chicken, dried cranberries, cucumber, cherry tomatoes, and red onion.
  • Sprinkle with crumbled feta cheese and fresh parsley.
  • Drizzle remaining olive oil if desired and serve warm.

Notes

Use quinoa for a lighter, protein-rich option or rice for a comforting base. Add toasted nuts like almonds or walnuts for extra crunch. Adjust honey and lemon juice to balance sweetness and acidity. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently to keep the chicken juicy and flavorful.
