Ingredients
  

Chicken and Potatoes

  • 1 lb chicken breasts cut into cubes
  • 4-5 russet potatoes small/medium-sized
  • 2 tablespoon butter
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1-2 tablespoon minced garlic
  • 1 cup shredded mozzarella cheese
  • Buffalo Wild Wings Garlic Parmesan Sauce use to coat the chicken
  • olive oil for potatoes
  • garlic powder for potatoes
  • paprika for potatoes

Instructions
 

Preparation

  • Wash, peel and cut the potatoes into small cubes.
  • Toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika, ensuring they are well coated.
  • Cook the potatoes in the air fryer at 400°F for about 25 minutes, shaking them a couple of times.
  • Cut the chicken into cubes once the potatoes are halfway cooked.
  • Cook the chicken in a skillet on medium-high heat with 2 tablespoon of butter.
  • Season the chicken with ½ teaspoon each of salt and pepper and 1 teaspoon each of paprika, onion powder, and Italian seasoning.
  • Add minced garlic and the Parmesan Garlic sauce to the cooked chicken, using enough sauce to coat the chicken.
  • Add the crispy cooked potatoes to the skillet and stir well.
  • Top with shredded mozzarella cheese and broil in the oven for just a few minutes to melt the cheese.
  • If desired, top with dried parsley and extra Parmesan Garlic sauce before serving.

Notes

If you don't have an air fryer, you can cook the potatoes in the oven at 400°F for about 30 minutes, stirring a few times while cooking.
