Pasta

  • 2 cups elbow macaroni uncooked

Dressing

  • 1 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Vegetables and Add-ins

  • ½ cup celery finely chopped
  • ½ cup red bell pepper finely chopped
  • ½ cup green bell pepper finely chopped
  • ¼ cup red onion finely chopped
  • ¼ cup sweet pickle relish
  • 2 large hard-boiled eggs chopped

Preparation

  • Cook elbow macaroni according to package instructions until al dente. Drain, rinse with cold water, and let cool completely.
  • In a large bowl, whisk together mayonnaise, yellow mustard, apple cider vinegar, salt, and black pepper until smooth and creamy.
  • Add chopped celery, red and green bell peppers, red onion, sweet pickle relish, and chopped eggs to the bowl.
  • Gently fold in the cooked and cooled macaroni until evenly coated with the dressing and mix-ins.
  • Cover and refrigerate for at least 1 hour before serving to allow flavors to blend.
