Ingredients
  

For the chicken

  • 4 pieces boneless, skinless chicken breasts
  • 0.5 teaspoon salt
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter

For the sauce

  • 1.5 cups chicken broth
  • 3 tablespoons cornstarch
  • 1 cup heavy cream Adjust if avoiding curdling
  • 4 cloves garlic, minced
  • 1.5 teaspoons Italian seasoning
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon red pepper flakes
  • 0.5 teaspoon paprika
  • 0.333 cup chopped sun-dried tomatoes, drained
  • 0.5 cup freshly grated parmesan cheese
  • 6-8 leaves fresh basil, chopped

Cooking Instructions

  • Mix together salt, garlic powder, onion powder, and black pepper in a small bowl. Season chicken breasts on both sides with the mix.
  • Heat a skillet over medium-high heat. Add olive oil and butter, allowing the butter to melt.
  • Sear the chicken breasts on both sides until golden brown, then set aside. Do not cook fully.
  • Whisk together chicken broth and cornstarch in a bowl until there are no lumps.
  • Add the broth mixture to the slow cooker.
  • Whisk in heavy cream, minced garlic, Italian seasoning, salt, black pepper, red pepper flakes, and paprika.
  • Place seared chicken breasts into the slow cooker and pour the olive oil and butter over them.
  • Top each chicken breast with chopped sun-dried tomatoes. Cook on low for 6-8 hours.
  • Remove chicken and whisk in parmesan cheese. Add chicken back to the cooker, cover with sauce, and top with basil before serving.

Notes

For best results, do not cook on high heat. Consider adding heavy cream in the last 30 minutes to avoid curdling. Doubling the sauce is recommended for serving over pasta or rice.
