Ingredients
  

Potatoes

  • 2 lb roasting potatoes Maris Piper, King Edward, Agria or Yukon gold are good options
  • ¼ cup unsalted butter
  • 3 cloves garlic, finely chopped or minced
  • 1 tablespoon fresh lemon juice
  • 1.5 teaspoon salt
  • 1 tablespoon chopped flat-leaf parsley leaves
  • 2 teaspoons flaky salt
  • 1 none Zest of 1 lemon

Cooking Instructions

  • Heat your oven to 400F/200C fan.
  • Chop the potatoes into large chunks, cover with cold water in a large pot, add 1 teaspoon of salt. Bring to boil, simmer for 8 minutes, drain, and shake the pot to fluff them up.
  • Melt the butter in a small pan over medium heat, then add garlic, lemon juice, and ½ teaspoon of salt. Stir for 2 minutes until fragrant, then remove from heat and add parsley.
  • Transfer potatoes to a large oven-proof dish, pour garlic butter sauce over, mix to coat, and roast for 30-40 minutes, stirring halfway through.
  • Once golden and brown around the edges, remove from oven and scatter flaky salt and lemon zest over, toss and serve immediately.

Notes

These potatoes are best when made fresh but can be stored in the fridge for 3 days. Reheat in the oven or microwave. Consider using leftovers in curries or salads.
