Ingredients
  

Corn Mixture

  • 4 cups corn kernels
  • 3 tablespoons butter for sautéing
  • 3 tablespoons mayonnaise
  • ½ cup Mexican crema or sour cream
  • 1 to 2 tablespoons lime juice to taste
  • 1 to 2 teaspoons chili powder plus more for topping
  • Salt to taste
  • 2 tablespoons fresh coriander or cilantro chopped
  • cup crumbled cotija cheese optional, for topping

Instructions
 

Cooking Instructions

  • Melt the butter in a skillet over medium heat.
  • Add the corn kernels and cook for 4 to 6 minutes, stirring occasionally, until hot and lightly roasted.
  • Transfer the corn to a bowl while still warm.
  • Add the mayonnaise, Mexican crema or sour cream, and lime juice. Mix well until the corn is evenly coated.
  • Add chili powder, salt, and chopped coriander or cilantro. Stir again.
  • Taste and adjust with more lime juice, salt, or chili powder if needed.
  • Spoon into serving cups.
  • Top with extra chili powder and more chopped coriander or cilantro, if desired.
  • Optional street-corn style upgrade: top with ⅓ cup crumbled cotija cheese, a little hot sauce or Tajín, and a pinch of garlic powder.

Notes

Feel free to adjust the spice level by adding more or less chili powder. For a vegetarian option, omit the cotija cheese or use a vegan cheese alternative. Can be served warm or at room temperature.
