Ingredients
  

  • 8 cups cabbage, very finely chopped (about 1 medium head)
  • ¼ cup carrot, finely shredded
  • 2 tablespoons onion, minced very fine
  • ½ cup mayonnaise
  • cup granulated sugar
  • ¼ cup whole milk
  • ¼ cup buttermilk
  • 2 ½ tablespoons lemon juice
  • 1 ½ tablespoons white vinegar
  • ½ teaspoon salt
  • teaspoon black pepper

Instructions
 

Preparation

  • Finely chop the cabbage until it is no larger than a grain of rice.
  • Grate the carrot using the smallest holes on a box grater.
  • Finely mince the onion until it is almost a liquid.
  • In a medium bowl, whisk together mayonnaise, sugar, milk, and buttermilk until combined.
  • Add lemon juice and white vinegar to the dressing and stir in salt and pepper.
  • Pour the dressing over the chopped vegetables and fold until well-coated.
  • Cover tightly and refrigerate for at least one hour before serving.

Notes

Allowing the coleslaw to cure in the dressing enhances its flavor and texture.
