Ingredients
  

Noodles and Garnish

  • 300 g udon noodles see link for more details
  • 1 thumb fresh ginger
  • 1 egg egg fried for garnish
  • 1 tablespoon sliced spring onion greens garnish
  • 1 teaspoon black sesame seeds garnish

Sauce Ingredients

  • 2 cloves garlic finely minced
  • pinch salt
  • 1 tablespoon chili oil see link for homemade version
  • 1 teaspoon chili flakes if you like the extra heat
  • 1 tablespoon soy sauce
  • 1 tablespoon dark rice vinegar
  • 1 tablespoon white sesame seeds
  • 4 tablespoon granola / peanut oil for frying
  • 1 teaspoon pure sesame oil

Instructions
 

Preparation

  • Finely mince the garlic and fresh ginger and put into a heatproof bowl. Add chili oil, chili flakes, salt and white sesame seeds.
  • In a small saucepan, heat up the granola/peanut oil. When the oil starts to smoke, take it from the stove and pour it over the other ingredients in the bowl.
  • Add soy sauce, vinegar and pure sesame oil and mix together.
  • Cook the udon noodles until they're soft, drain them and put them into the garlic chili oil mix.
  • Mix the noodles well with the sauce and garnish with a fried egg, some sliced spring onion greens and some black sesame seeds. Enjoy!

Notes

Adjust the level of spiciness to your preference by varying the amount of chili oil and chili flakes.
