- 1 box Penne pasta cook as directed
- 1 pound Peeled shrimp tails removed
- 3 cups Chopped fresh spinach
- 1 tablespoon Minced garlic
- 2 tablespoon Butter
- 1 cup Heavy cream
- 1 cup Shredded mozzarella
- 3 teaspoon Olive oil
Prepare the penne pasta as per package directions.
Set to the side.
In a large saute pan drizzle olive oil and add the spinach with the minced garlic.
Cook until tender.
Add the cooked shrimp to the spinach and toss to combine.
Add the pasta to the shrimp mixture, toss to combine.
In a small saucepan add the heavy cream and bring to a boil.
Add the mozzarella to the cream and stir until all of the cheese is melted.
Pour the cheese sauce over the pasta mixture and toss to combine.
Garnish and enjoy!
