Ingredients
  

Vegetables

  • 2 pieces aubergines about 650g
  • 1 piece onion new
  • 2 cloves garlic small

Condiments

  • 2 tablespoons lemon juice
  • 4 tablespoons olive oil
  • 3 tablespoons tahini
  • 1 teaspoon cumin
  • 0.5 teaspoon smoked paprika

Herbs

  • 1 bunch parsley chopped

Instructions
 

Preparation

  • Preheat the oven to 200°C.
  • Wash the eggplants, then prick the skin with a fork.
  • Bake them on a baking sheet for 50 minutes.
  • Optional: At the end of cooking, turn on the grill and let the skin grill for a few minutes.
  • Peel the eggplants.
  • Place them in your blender with all the other ingredients. Blend until smooth and slightly frothy.
  • Adjust seasoning.
  • Let the caviar rest for at least 1 hour in the fridge before serving with pitas, bread, or raw vegetables.
  • You can also enjoy it in a sandwich.
