Ingredients
  

Choux Pastry

  • 1 cup water
  • 1 cup milk
  • ½ cup unsalted butter plus extra for greasing
  • 1 teaspoon salt
  • 1 cup bread flour
  • 4 large eggs room temperature

Pastry Cream

  • 2 cups whole milk infused with black sesame
  • 6 large egg yolks
  • ½ cup granulated sugar
  • ¼ cup cornstarch
  • 1 pinch salt
  • ¼ cup black sesame seeds toasted and ground

Caramelized Bananas

  • 2 ripe bananas sliced
  • 2 tablespoons unsalted butter
  • ¼ cup dark brown sugar
  • 1 teaspoon vanilla extract

Instructions
 

Prepare Choux Pastry

  • Preheat the oven to 400°F (200°C). In a saucepan, combine water, milk, butter, and salt. Bring to a boil.
  • Add flour all at once and stir vigorously until a dough forms. Cook for 1-2 minutes until the dough pulls away from the sides.
  • Transfer the dough to a mixing bowl and let it cool slightly. Add eggs one at a time, mixing until smooth and glossy.
  • Pipe mounds onto a baking sheet, and bake for 25-30 minutes until golden brown and puffy.

Make Pastry Cream

  • Whisk egg yolks, sugar, and cornstarch until pale. Gradually add hot milk while whisking to temper the eggs.
  • Return the mixture to the heat and cook until thickened, whisking constantly. Strain through a sieve for a smooth texture.
  • Chill the pastry cream in the refrigerator until ready to use.

Caramelize Bananas

  • In a skillet, melt butter and brown sugar over medium heat. Add banana slices and cook for 1-2 minutes per side until glossy.

Assemble Cream Puffs

  • Carefully fill each puff with chilled pastry cream using a piping bag.
  • Top with warm caramelized bananas just before serving.
  • Dust with powdered sugar before serving.

Notes

For the best texture, fill the puffs no more than 1-2 hours before serving. Store baked shells and cream separately for another day.
