For the Bruschetta

  • 4 whole Roma tomatoes Cored and diced
  • ¼ cup basil leaves Chopped
  • 1 clove garlic Minced
  • 1 tablespoon extra virgin olive oil
  • 1-2 teaspoons balsamic vinegar To taste
  • Salt To taste

For the Cheese Mixture

  • 8 oz feta cheese Crumble the cheese
  • ½ block (4 oz) cream cheese Softened
  • ½ cup sour cream
  • 1 clove garlic Minced
  • 1 tablespoon lemon juice Freshly squeezed
  • 1 tablespoon olive oil
  • Salt To taste

For Garnishing

  • More basil leaves Chopped
  • Red pepper flakes To taste
  • Parmesan cheese Freshly grated

Instructions
 

Preparing the Bruschetta

  • Begin by coring and dicing the Roma tomatoes into small cubes.
  • Place the diced tomatoes in a medium bowl and add chopped basil leaves and minced garlic.
  • Drizzle in the extra virgin olive oil and balsamic vinegar, then sprinkle with salt.
  • Toss the ingredients gently to combine and set aside to marinate for about 10 minutes.

Preparing the Cheese Mixture

  • In the bowl of a food processor, combine crumbled feta cheese, softened cream cheese, sour cream, minced garlic, lemon juice, and olive oil.
  • Puree the ingredients for 3 to 4 minutes until the mixture is smooth and creamy.
  • Taste the cheese mixture and adjust seasoning with salt if necessary.

Assembling the Dip

  • Transfer the smooth cheese mixture into a shallow serving dish.
  • Spoon the marinated bruschetta mixture on top of the cheese mixture.
  • Garnish the dip with chopped basil, red pepper flakes, and grated Parmesan cheese.

Notes

If you prefer, substitute feta cheese with goat cheese, ricotta, or plant-based alternatives for a vegan version.
