Ingredients
  

  • 12 noodles lasagna noodles
  • 3 cups cooked shredded chicken Use rotisserie chicken for convenience
  • 1 cup barbecue sauce
  • 1.5 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 0.5 cup grated parmesan cheese
  • 0.5 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil Lightly grease the baking dish
  • 2 tablespoons chopped fresh parsley For garnish
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Preheat oven to 375°F.
  • Mix shredded chicken with barbecue sauce until well coated.
  • Lightly grease a baking dish with olive oil.
  • Layer noodles, ricotta, chicken mixture, onion, and mozzarella. Repeat layers and finish with cheese.
  • Cover with foil and bake for 25 minutes.
  • Remove foil and bake another 15 minutes until golden.
  • Let rest for 10 minutes, garnish with parsley, and serve.

Notes

Let the lasagna rest before slicing. Do not over-sauce to avoid soggy texture.
