Filling
- 4 large Barlett or Anjou pears firm but ripe
- ¼ cup old-fashioned oats
- ¼ cup nuts a mixture of pecans, walnuts, pumpkin seeds, sunflowers etc
- 1 tablespoon brown sugar
- ½ teaspoon ground cinnamon
- salt a pinch
- 2 tablespoons butter melted
Topping
- 4 ounces mascarpone cheese
- 2 tablespoons honey
Preparation
Preheat the oven to 350 degrees F.
Cut each pear in half. Remove the seeds using a spoon to scoop out the seeds/core.
Place the pears on a baking sheet with the cut side facing up.
In a small bowl, whisk together the oats, nuts, brown sugar, cinnamon, and salt. Add in the melted butter and stir until combined. Use your fingers to create clumps in the oat mixture.
Spoon about a tablespoon of the oat mixture into the center of each pear.
Bake pears in the oven for about 30 minutes or until tender and oats are lightly browned.
Remove from baking sheet. Serve each pear with a dollop of mascarpone cheese and a drizzle of honey.
