Fish

  • 1.5 lbs Cod Fillets about 4 thick fillets

Cooking Oils

  • 2 tablespoon Olive Oil or Coconut Oil

Seasonings

  • Salt
  • Freshly Ground Black Pepper

Aromatics

  • 4 cloves Garlic minced

Sauce

  • 1 can Full-Fat Coconut Milk 13.5 oz
  • 1 large Lemon for both zest and juice
  • 1 big handful Fresh Parsley chopped

Preparation Steps

  • Preheat oven to 400°F (200°C) and pat cod fillets dry with paper towels, then season with salt and pepper.
  • Heat oil in an oven-safe skillet over medium-high heat and add cod fillets, cooking for 2-3 minutes until crust forms.
  • Flip the cod fillets and reduce heat to medium. Add minced garlic and stir for about a minute.
  • Pour in the coconut milk and lemon zest, stirring to combine, and let it bubble gently.
  • Turn off the burner, spoon sauce over the fish, and bake in the oven for 10-15 minutes until cooked through.
