- 1 large Lemon for both zest and juice
- 1 big handful Fresh Parsley chopped
Preparation Steps
Preheat oven to 400°F (200°C) and pat cod fillets dry with paper towels, then season with salt and pepper.
Heat oil in an oven-safe skillet over medium-high heat and add cod fillets, cooking for 2-3 minutes until crust forms.
Flip the cod fillets and reduce heat to medium. Add minced garlic and stir for about a minute.
Pour in the coconut milk and lemon zest, stirring to combine, and let it bubble gently.
