- 5 slices thick-cut bacon cut crosswise into 1-inch pieces
- ½ cup ranch dressing
- 3 tablespoons white wine vinegar
- ½ teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 1 pound broccoli florets cut into rough ½- to ¾-inch pieces
- ½ medium red onion finely chopped
- 3 ounces sharp cheddar cheese cut into ¼-inch cubes
Place 5 thick-cut bacon pieces in a large skillet and cook over medium heat until browned and crisp, about 15 minutes. Turn off the heat.
Use a slotted spoon to transfer the bacon to a paper towel-lined plate. Transfer 1 tablespoon of the rendered bacon fat to a large bowl and discard the remaining fat. Add ranch dressing, white wine vinegar, kosher salt, and black pepper to the bacon fat and whisk to combine.
Add broccoli florets, finely chopped red onion, and sharp cheddar cheese cubes to the bowl of dressing.
Coarsely chop the bacon, add half to the bowl, and toss until well-combined. Garnish with the remaining bacon, and serve either at room temperature or chilled.
