Ingredients
  

Vegetables

  • 2.5 pounds butternut squash
  • 1 tablespoon extra virgin olive oil
  • kosher salt to taste
  • ground black pepper to taste

Filling

  • 0.5 pound Italian sausage
  • 0.5 cup onion, diced
  • 3 cloves garlic, minced
  • 2 cups baby spinach lightly packed
  • 1 apple, cored and diced
  • 1 tablespoon fresh sage, chopped finely
  • 0.5 tablespoon fresh rosemary, chopped finely
  • 0.33 cup dried cranberries unsweetened
  • 0.25 cup pecans roughly chopped

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Slice the butternut squash in half with a very sharp knife.
  • Scoop the seeds out of the butternut squash with a spoon. Lightly oil and season with salt and pepper.
  • Lay the butternut squash cut side down on a baking sheet or dish and bake for 40 to 45 minutes.

Cooking the Filling

  • In a sauté pan on medium heat, add the sausage and break it up with a spatula until browned.
  • Add the onions, garlic, and baby spinach, stirring for 2 to 3 minutes until the spinach is wilted.
  • Add the apple, sage, and rosemary, cooking for another 2 to 3 minutes until the apple softens.
  • Turn off the heat and stir in cranberries and pecans.

Assembly

  • Remove squash from the oven, flip open, and remove some flesh for filling.
  • Stuff the butternut squash with the apple sausage filling.
  • Turn on the top broiler and bake for 5 minutes until golden on top.

Notes

Leftover filling can be topped on leafy greens for a salad or rice for a quick lunch. Filling can be made ahead of time and reheated.
