Ingredients
  

Apples

  • 1.5 cups peeled & chopped apples ½ inch chunks; about 2 medium apples
  • cup packed brown sugar
  • 1.5 teaspoons ground cinnamon

Batter

  • 1.75 cups all-purpose flour spooned & leveled
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter softened to room temperature
  • ¾ cup granulated sugar
  • 2 large eggs at room temperature
  • cup unsweetened applesauce at room temperature
  • 1 teaspoon pure vanilla extract
  • ½ cup whole milk at room temperature

Instructions
 

Preparation

  • Adjust the oven rack to the lower third position and preheat the oven to 350°F (177°C). Spray a 9×5-inch loaf pan with nonstick spray.
  • Stir the apples, brown sugar, and cinnamon together in a bowl. Set aside.
  • Whisk the flour, cinnamon, nutmeg, baking powder, baking soda, and salt together in a large bowl. Set aside. Beat the butter and granulated sugar together until smooth and creamy. Add the eggs, applesauce, and vanilla extract, mixing until combined. Pour the dry ingredients into the wet ingredients, and mix with the milk until combined.
  • Pour and spread half of the batter into the prepared loaf pan. Spoon the apples and any juices on top, then pour the remaining batter over.
  • Bake for 60-75 minutes, loosely covering with aluminum foil at 30 minutes. Check with a toothpick to see if done.
  • Let the bread cool in the pan for at least 30 minutes before slicing.
  • Store covered at room temperature for up to 2 days or in the refrigerator for up to 1 week.

Notes

Freeze baked & cooled loaf for up to 3 months. Thaw overnight in the refrigerator. Apples: use tart or sweet varieties like Granny Smith, Honeycrisp, or Fuji.
