  • 0.25 teaspoon salt
  • 0.5 cups unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 cup apple cider
  • 1 teaspoon vanilla extract

Caramel Filling Ingredients

  • 0.5 cups unsalted butter
  • 1 cup brown sugar
  • 0.25 cups heavy cream
  • 1 teaspoon vanilla extract

Preparation

  • Preheat the oven to 350°F (175°C).
  • Whisk flour, baking soda, cinnamon, nutmeg, and salt in a bowl.
  • Beat softened butter and brown sugar until fluffy.
  • Mix in eggs, apple cider, and vanilla until combined.
  • Gradually add dry ingredients to wet, mixing until just combined.
  • Drop rounded balls onto a lined baking sheet.
  • Bake for 12-15 minutes until edges are golden.
  • Melt butter, stir in brown sugar and cream, boil for 3-5 minutes, then add vanilla to make caramel filling.
  • Spread caramel on one cookie and sandwich with another.
