Ingredients
  

Cookie Base

  • 1 package Puff Pastry, thawed, store-bought
  • ½ cup Unsalted Butter, softened
  • 1 large Egg, for egg wash

Filling

  • 1 cup Almond Paste or mix almond meal with powdered sugar
  • ½ cup Powdered Sugar adjust to taste
  • 1 teaspoon Vanilla Extract pure

Topping

  • ¼ cup Sliced Almonds or chopped hazelnuts or pistachios

Instructions
 

Steps

  • Preheat your oven to 375°F (190°C).
  • Roll out your thawed puff pastry on a floured surface and cut it into 8 equal squares.
  • In a bowl, blend almond paste, powdered sugar, softened butter, and vanilla extract until smooth.
  • Place a small spoonful of the almond filling at the center of each pastry square.
  • Gently fold the pastry into a triangle or crescent shape, sealing the edges tightly.
  • Brush the tops with your beaten egg and sprinkle with sliced almonds.
  • Arrange the cookies on a parchment-lined baking sheet and bake for 15-18 minutes until golden brown.
  • Allow your cookies to cool slightly before serving.
