Cookie Base
- 1 package Puff Pastry, thawed, store-bought
- ½ cup Unsalted Butter, softened
- 1 large Egg, for egg wash
Filling
- 1 cup Almond Paste or mix almond meal with powdered sugar
- ½ cup Powdered Sugar adjust to taste
- 1 teaspoon Vanilla Extract pure
Topping
- ¼ cup Sliced Almonds or chopped hazelnuts or pistachios
Steps
Preheat your oven to 375°F (190°C).
Roll out your thawed puff pastry on a floured surface and cut it into 8 equal squares.
In a bowl, blend almond paste, powdered sugar, softened butter, and vanilla extract until smooth.
Place a small spoonful of the almond filling at the center of each pastry square.
Gently fold the pastry into a triangle or crescent shape, sealing the edges tightly.
Brush the tops with your beaten egg and sprinkle with sliced almonds.
Arrange the cookies on a parchment-lined baking sheet and bake for 15-18 minutes until golden brown.
Allow your cookies to cool slightly before serving.
